Ingredients

  • 1/2 pound thinly sliced corned beef (nitrate-free if possible)

  • 4 slices Swiss cheese

  • 1/2 cup sauerkraut (check for no added sugars)

  • 4 large Romaine lettuce leaves (or any other sturdy lettuce leaves of your choice)

  • 1/4 cup sugar-free Russian dressing (see recipe below)

  • Salt and pepper to taste


For the Sugar-free Russian Dressing:


  • 1/4 cup mayonnaise (make sure it's sugar-free)

  • 1 tablespoon sugar-free ketchup

  • 1 tablespoon sugar-free pickle relish

  • 1/2 teaspoon Worcestershire sauce

  • 1/2 teaspoon onion powder

  • 1/4 teaspoon garlic powder

  • Salt and pepper to taste

Directions

  1. Prepare the Sugar-free Russian Dressing: In a small bowl, whisk together the mayonnaise, sugar-free ketchup, sugar-free pickle relish, Worcestershire sauce, onion powder, garlic powder, salt, and pepper. Adjust the seasoning to your taste preference. Set aside.

  2. Assemble the Reuben Roll-Ups: Lay out the Romaine lettuce leaves and pat them dry with a paper towel. Lay a slice of Swiss cheese on each lettuce leaf.

  3. Next, divide the corned beef evenly among the lettuce leaves, placing it on top of the Swiss cheese.

  4. Add a couple of tablespoons of sauerkraut on top of the corned beef for each lettuce leaf.

  5. Drizzle the sugar-free Russian dressing over the sauerkraut for each roll-up.

  6. Season with a pinch of salt and pepper.

  7. Roll up the lettuce leaves tightly to create the Reuben roll-ups.

  8. Secure the roll-ups with toothpicks if necessary.
