2 lbs (900g) pork shoulder, trimmed of excess fat
1 cup chicken or vegetable broth (low-sodium)
1/4 cup apple cider vinegar
2 cloves garlic, minced
1 teaspoon smoked paprika
1/2 teaspoon ground cumin
1/2 teaspoon onion powder
1/2 teaspoon black pepper
1/2 teaspoon salt
For the lettuce wraps:
Large lettuce leaves (such as iceberg or romaine)
Sliced pickles (choose low-sugar options)
Directions
In a slow cooker or Instant Pot, combine the chicken or vegetable broth, apple cider vinegar, minced garlic, smoked paprika, ground cumin, onion powder, black pepper, and salt.
Add the trimmed pork shoulder to the slow cooker or Instant Pot and coat it with the spice mixture.
If using a slow cooker, cook on low heat for 8-10 hours or high heat for 4-6 hours until the pork is tender and easily pulls apart. If using an Instant Pot, cook on high pressure for 90 minutes, then allow for natural pressure release.
Once the pork is cooked, remove it from the slow cooker or Instant Pot and shred it using two forks.
If using a slow cooker, transfer the remaining liquid to a saucepan and simmer over medium heat until it reduces and thickens slightly. If using an Instant Pot, select the sauté function and simmer until the liquid reduces.
Pour the reduced sauce over the shredded pork and mix well.
To assemble the lettuce wraps, take a large lettuce leaf and place a portion of the pulled pork in the center.
Top the pulled pork with a few slices of pickles.
Wrap the lettuce around the filling, securing it with toothpicks if necessary.
Repeat the process for the remaining lettuce leaves and pulled pork.
