Ingredients
4 ounces (113 grams) of lean pork loin, sliced into thin strips
1 cup mixed vegetables (broccoli, bell peppers, snap peas, mushrooms, etc.), sliced or chopped
1 tablespoon olive oil
2 cloves garlic, minced
1 teaspoon grated ginger
1 tablespoon low-sodium soy sauce
1 tablespoon rice vinegar
1/2 teaspoon sesame oil
Salt and pepper to taste
Chopped green onions for garnish
Directions
Heat the olive oil in a non-stick skillet or wok over medium-high heat.
Add the pork strips to the pan and cook until browned and cooked through. Remove the pork from the pan and set aside.
In the same pan, add the minced garlic and grated ginger. Stir-fry for about 30 seconds until fragrant.
Add the mixed vegetables to the pan and stir-fry for 3-4 minutes until they are crisp-tender.
In a small bowl, whisk together the soy sauce, rice vinegar, and sesame oil.
Pour the sauce mixture over the vegetables in the pan and stir well to coat.
Return the cooked pork to the pan and stir-fry for an additional minute to heat through and combine flavors.
