Ingredients

  • 2 bone-in pork chops (about 6-8 ounces each)

  • 1 tablespoon olive oil

  • 1 teaspoon garlic powder

  • 1 teaspoon smoked paprika

  • 1/2 teaspoon salt

  • 1/4 teaspoon black pepper

  • 1 medium head of cauliflower, cut into florets

  • 2 tablespoons unsalted butter

  • 1/4 cup grated parmesan cheese

  • Salt and pepper to taste

  • Chopped fresh parsley (optional, for garnish)

Directions

  1. Preheat your oven to 375°F (190°C).

  2. Pat the pork chops dry with a paper towel, then rub them with olive oil on both sides.

  3. In a small bowl, mix the garlic powder, smoked paprika, salt, and black pepper.

  4. Rub the spice mixture evenly over the pork chops, ensuring they are well coated.

  5. Heat a cast-iron skillet or oven-safe pan over medium-high heat. Once hot, sear the pork chops for about 2 minutes on each side until they develop a golden crust.

  6. Transfer the pan to the preheated oven and cook for an additional 12-15 minutes or until the internal temperature of the pork reaches 145°F (63°C).

  7. Remove the pork chops from the oven and let them rest for a few minutes before serving.

  8. Steam or boil the cauliflower florets until they are tender and easily mashable. This should take about 8-10 minutes.

  9. Drain the cauliflower and transfer it to a food processor or blender.

  10. Add the butter and grated parmesan cheese to the cauliflower, and season with salt and pepper to taste.

  11. Blend until you achieve a smooth, creamy consistency similar to mashed potatoes.

  12. Taste and adjust the seasoning if needed.

  13. Serve the cauliflower mash alongside the pork chops, and garnish with chopped fresh parsley if desired.
