Ingredients
2 bone-in pork chops (about 6-8 ounces each)
1 tablespoon olive oil
1 teaspoon garlic powder
1 teaspoon smoked paprika
1/2 teaspoon salt
1/4 teaspoon black pepper
1 medium head of cauliflower, cut into florets
2 tablespoons unsalted butter
1/4 cup grated parmesan cheese
Salt and pepper to taste
Chopped fresh parsley (optional, for garnish)
Directions
Preheat your oven to 375°F (190°C).
Pat the pork chops dry with a paper towel, then rub them with olive oil on both sides.
In a small bowl, mix the garlic powder, smoked paprika, salt, and black pepper.
Rub the spice mixture evenly over the pork chops, ensuring they are well coated.
Heat a cast-iron skillet or oven-safe pan over medium-high heat. Once hot, sear the pork chops for about 2 minutes on each side until they develop a golden crust.
Transfer the pan to the preheated oven and cook for an additional 12-15 minutes or until the internal temperature of the pork reaches 145°F (63°C).
Remove the pork chops from the oven and let them rest for a few minutes before serving.
Steam or boil the cauliflower florets until they are tender and easily mashable. This should take about 8-10 minutes.
Drain the cauliflower and transfer it to a food processor or blender.
Add the butter and grated parmesan cheese to the cauliflower, and season with salt and pepper to taste.
Blend until you achieve a smooth, creamy consistency similar to mashed potatoes.
Taste and adjust the seasoning if needed.
Serve the cauliflower mash alongside the pork chops, and garnish with chopped fresh parsley if desired.
