1 cup low-fat cottage cheese (organic if possible)
½ cup part-skim mozzarella cheese (organic, if possible)
½ cup organic tomato sauce (no sugar added)
½ pound lean ground turkey or chicken (organic if possible)
½ teaspoon dried oregano
½ teaspoon dried basil
¼ teaspoon garlic powder
¼ teaspoon crushed red pepper flakes (optional)
½ cup diced bell peppers (organic)
¼ cup chopped mushrooms (organic)
2 tablespoons chopped fresh basil
1 teaspoon olive oil (extra virgin, cold-pressed)
Salt and pepper to taste
Directions
Preheat oven to 375°F (190°C).
In a non-stick pan, heat olive oil over medium heat. Add ground turkey or chicken, season with garlic powder, oregano, basil, red pepper flakes, salt, and pepper. Cook until browned, about 5-7 minutes.
Stir in chopped bell peppers and mushrooms. Cook for another 3 minutes until softened.
Spread the cottage cheese evenly in an oven-safe dish. Layer with tomato sauce, followed by the cooked turkey mixture.
Sprinkle mozzarella cheese evenly on top.
Bake for 12-15 minutes until bubbly and golden brown.
Garnish with fresh basil and serve warm.280
