Ingredients

  • 1 cup low-fat cottage cheese (organic if possible)

  • ½ cup part-skim mozzarella cheese (organic, if possible)

  • ½ cup organic tomato sauce (no sugar added)

  • ½ pound lean ground turkey or chicken (organic if possible)

  • ½ teaspoon dried oregano

  • ½ teaspoon dried basil

  • ¼ teaspoon garlic powder

  • ¼ teaspoon crushed red pepper flakes (optional)

  • ½ cup diced bell peppers (organic)

  • ¼ cup chopped mushrooms (organic)

  • 2 tablespoons chopped fresh basil

  • 1 teaspoon olive oil (extra virgin, cold-pressed)

  • Salt and pepper to taste

Directions

  • Preheat oven to 375°F (190°C).

  • In a non-stick pan, heat olive oil over medium heat. Add ground turkey or chicken, season with garlic powder, oregano, basil, red pepper flakes, salt, and pepper. Cook until browned, about 5-7 minutes.

  • Stir in chopped bell peppers and mushrooms. Cook for another 3 minutes until softened.

  • Spread the cottage cheese evenly in an oven-safe dish. Layer with tomato sauce, followed by the cooked turkey mixture.

  • Sprinkle mozzarella cheese evenly on top.

  • Bake for 12-15 minutes until bubbly and golden brown.

  • Garnish with fresh basil and serve warm.280
