Ingredients

  • 3/4 package firm tofu, pressed of excess water

  • 3 ripe peaches, peeled and diced

  • 1/2 cup heavy cream

  • 1 tsp vanilla extract

  • 1-2 tbsp low-carb sweetener (such as monk fruit or erythritol)

Directions

  1. Start by pressing the excess water out of the firm tofu. You can do this by wrapping it in a clean kitchen towel or paper towel and placing something heavy on top for about 15-20 minutes. This helps to remove excess moisture from the tofu.


  2. In a blender or food processor, combine the pressed tofu, diced peaches, heavy cream, vanilla extract, and low-carb sweetener.


  3. Blend the mixture until smooth and creamy. Make sure there are no lumps and the ingredients are well combined.


  4. Taste the mixture and adjust the sweetness if needed by adding more low-carb sweeteners.


  5. Once the mixture is smooth and well blended, transfer it to a serving dish or individual ramekins.


  6. Cover the dish or ramekins and refrigerate for at least 2 hours or until set. Chilling allows the flavors to meld together and gives the pudding a firmer texture.


  7. Before serving, you can garnish the peach pudding with some additional diced peaches or a dollop of whipped cream, if desired.
