Ingredients

  • 1 cod fillet (about 4 oz)

  • 1 medium zucchini, sliced into 1/2-inch rounds

  • 1 tablespoon olive oil

  • Salt and pepper to taste

  • Lemon wedges for serving (optional)

Directions

  1. Preheat your oven to 400°F (200°C) and preheat your grill or grill pan over medium-high heat.

  2. Season the cod fillet on both sides with salt and pepper.

  3. Place the cod on a lined baking sheet and bake in the preheated oven for about 10-12 minutes, or until the fish is opaque and flakes easily with a fork.

  4. While the cod is baking, toss the zucchini rounds in olive oil, salt, and pepper.
