1 cod fillet (about 4 oz)
1 medium zucchini, sliced into 1/2-inch rounds
1 tablespoon olive oil
Salt and pepper to taste
Lemon wedges for serving (optional)
Directions
Preheat your oven to 400°F (200°C) and preheat your grill or grill pan over medium-high heat.
Season the cod fillet on both sides with salt and pepper.
Place the cod on a lined baking sheet and bake in the preheated oven for about 10-12 minutes, or until the fish is opaque and flakes easily with a fork.
While the cod is baking, toss the zucchini rounds in olive oil, salt, and pepper.
