4 oz chicken breast
2 tbsp coconut aminos
1/4 cup chicken broth
1 tbsp fresh ginger, grated
1 clove garlic, minced
1 tsp sesame oil
1/4 tsp red pepper flakes
1/4 tsp sea salt
1/4 tsp black pepper
1 tbsp avocado oil
1/4 cup scallions, sliced
1 tbsp toasted sesame seeds
Directions
In a bowl, combine the coconut aminos, chicken broth, grated ginger, minced garlic, sesame oil, red pepper flakes, sea salt, and black pepper. Mix well to create the marinade.
Place the chicken breast in a shallow dish or resealable plastic bag. Pour the marinade over the chicken, making sure it is coated evenly. Allow the chicken to marinate for at least 30 minutes to enhance the flavor.
Heat the avocado oil in a skillet or frying pan over medium heat. Remove the chicken from the marinade, reserving the marinade for later use. Place the chicken in the heated pan and cook for about 5-6 minutes per side or until it is cooked through and no longer pink in the center.
Remove the cooked chicken from the pan and set it aside on a plate.
Pour the reserved marinade into the same pan and bring it to a boil. Reduce the heat and simmer for about 2-3 minutes to allow the flavors to meld together and the sauce to thicken slightly.
Slice the cooked chicken into thin strips and return them to the pan. Toss the chicken in the sauce, making sure each piece is coated.
Add the sliced scallions to the pan and stir them into the chicken and sauce mixture. Cook for an additional 1-2 minutes until the scallions have softened slightly.
Transfer the Oriental Ginger Chicken to a serving plate. Sprinkle the toasted sesame seeds on top as a garnish.
