Ingredients

  • 2 large eggs

  • 2 oz smoked salmon, sliced

  • 1 tablespoon capers

  • 1 tablespoon cream cheese

  • 1/2 tablespoon butter or olive oil

  • Salt and pepper to taste

Directions

  • Crack the eggs into a bowl and beat them until the yolks and whites are fully combined. Season with a pinch of salt and pepper.

  • Heat a non-stick skillet over medium heat. Add the butter or olive oil and allow it to melt.

  • Pour the beaten eggs into the skillet. Let them cook undisturbed for a few moments until they start to set around the edges.

  • Using a spatula, gently push the eggs from the edges toward the center. Let them sit for a moment again, then repeat the pushing and stirring, until the eggs are mostly cooked but still slightly runny.

  • Arrange the slices of smoked salmon, capers, and dollops of cream cheese on one half of the omelet.

  • Carefully fold the other half of the omelet over the filling. Let it cook for another minute to allow the cream cheese to soften.

  • Slide the omelette onto a plate and serve immediately.
