2 large eggs
2 oz smoked salmon, sliced
1 tablespoon capers
1 tablespoon cream cheese
1/2 tablespoon butter or olive oil
Salt and pepper to taste
Crack the eggs into a bowl and beat them until the yolks and whites are fully combined. Season with a pinch of salt and pepper.
Heat a non-stick skillet over medium heat. Add the butter or olive oil and allow it to melt.
Pour the beaten eggs into the skillet. Let them cook undisturbed for a few moments until they start to set around the edges.
Using a spatula, gently push the eggs from the edges toward the center. Let them sit for a moment again, then repeat the pushing and stirring, until the eggs are mostly cooked but still slightly runny.
Arrange the slices of smoked salmon, capers, and dollops of cream cheese on one half of the omelet.
Carefully fold the other half of the omelet over the filling. Let it cook for another minute to allow the cream cheese to soften.
Slide the omelette onto a plate and serve immediately.
