Ingredients

New England-Style Hot Dog (No Bun) Ingredients:

  • 1 large chicken or turkey sausage (check the label for low-carb and sugar-free options)

  • 1 tablespoon olive oil

  • 1/4 cup chopped onion

  • 1/4 cup chopped green bell pepper

  • 1/4 cup chopped red bell pepper

  • 1/4 teaspoon garlic powder

  • 1/4 teaspoon paprika

  • Salt and pepper to taste

  • Chopped fresh parsley (optional, for garnish)

Cucumber Salad Ingredients:

  • 1 medium cucumber, thinly sliced

  • 1/4 cup sliced red onion

  • 1 tablespoon apple cider vinegar

  • 1 tablespoon extra virgin olive oil

  • 1/4 teaspoon dried dill

  • Salt and pepper to taste

Directions

  1. Heat the olive oil in a skillet over medium heat. Add the chopped onion and bell peppers and sauté until they are tender and slightly caramelized, about 5-7 minutes.

  2. Push the vegetables to one side of the skillet and add the chicken or turkey sausage to the other side. Cook the sausage, turning occasionally, until it is cooked through and nicely browned, about 8-10 minutes.

  3. Sprinkle the garlic powder, paprika, salt, and pepper over the sausage and vegetables. Stir everything together to evenly distribute the seasonings. Cook for an additional 2 minutes to allow the flavors to meld together. Remove from heat.

  4. For the cucumber salad, in a mixing bowl, combine the cucumber slices, sliced red onion, apple cider vinegar, olive oil, dried dill, salt, and pepper. Toss everything together until well combined.

  5. Serve the New England-style hot dog on a plate, topped with the sautéed vegetables. Sprinkle with chopped fresh parsley if desired. Serve the cucumber salad on the side.
