1 lb thinly sliced beef (flank steak or sirloin)
1 small head of cabbage, thinly sliced
1/2 cup water
2 tbsp apple cider vinegar
2 tbsp low-sodium soy sauce
2 cloves garlic, minced
1 tsp ginger, grated
1/4 tsp red pepper flakes, or to taste
Salt and pepper to taste
2 tbsp avocado oil or other high heat oil

Directions
In a small bowl, combine the water, apple cider vinegar, soy sauce, minced garlic, grated ginger, red pepper flakes, salt, and pepper. Mix well to create a marinade.
Place the thinly sliced beef in a shallow dish or ziplock bag and pour the marinade over it. Ensure that the beef is evenly coated. Let it marinate for at least 30 minutes, or refrigerate overnight for maximum flavor.
Heat the avocado oil in a large skillet or wok over medium-high heat.
Once the oil is hot, remove the beef from the marinade, allowing any excess liquid to drip off, and add it to the hot skillet. Cook the beef in batches if necessary, to avoid overcrowding the pan.
Stir-fry the beef for about 2-3 minutes until it is browned and cooked through. Remove the beef from the skillet and set it aside.
In the same skillet, add the thinly sliced cabbage. Stir-fry for about 3-4 minutes until the cabbage begins to soften but still retains some crunch.
Return the cooked beef to the skillet with the cabbage. Stir-fry for another minute or so, allowing the flavors to meld together.
Taste and adjust the seasoning as desired, adding more salt, pepper, or red pepper flakes if needed.
