For the Salad:
2 cups mixed greens (spinach, arugula, and/or kale)
1 avocado, sliced
1 small grilled chicken breast, sliced
1/4 cup cherry tomatoes, halved
2 tbsp sliced almonds
For the Dressing:
1/4 cup extra-virgin olive oil
2 tbsp freshly squeezed lemon juice
1 clove garlic, minced
1/2 tsp dijon mustard
Salt and pepper, to taste
Start by grilling the chicken breast until fully cooked. Let it rest for 5 minutes, then slice it into thin pieces.
In a large mixing bowl, add the mixed greens, avocado, cherry tomatoes, sliced almonds, and sliced chicken.
In a small mixing bowl, whisk together the extra-virgin olive oil, freshly squeezed lemon juice, minced garlic, dijon mustard, salt, and pepper.
