Ingredients

  • 140g lean chicken breast, diced (44g protein)

  • 1 tablespoon olive oil

  • 1 small onion, chopped

  • 2 cloves garlic, minced

  • 2 medium zucchini, diced

  • 1 cup green beans, trimmed and cut into bite-sized pieces

  • 1 cup spinach leaves

  • 1 cup kale leaves, chopped

  • 1 can (400g) diced tomatoes

  • 4 cups low-sodium chicken or vegetable broth

  • 1 teaspoon dried basil

  • 1 teaspoon dried oregano

  • Salt and pepper to taste

Directions

  1. Heat the olive oil in a large pot over medium heat. Add the diced chicken breast and cook until browned and cooked through. Remove the chicken from the pot and set aside.

  2. In the same pot, add the chopped onion and minced garlic. Sauté until the onion is translucent and fragrant.

  3. Add the diced zucchini, green beans, spinach, and kale to the pot. Stir and cook for a few minutes until the vegetables start to soften.

  4. Pour in the diced tomatoes and chicken or vegetable broth. Add the dried basil and oregano. Stir well and bring the soup to a boil.

  5. Reduce the heat to low and let the soup simmer for about 15-20 minutes to allow the flavors to meld together.

  6. Season with salt and pepper to taste.

  7. Return the cooked chicken to the pot and simmer for an additional 5 minutes to heat the chicken through.

  8. Serve the Minestrone soup hot and enjoy!
