Ingredients

  • 1 lb ground sirloin or ground buffalo

  • ½ cup onion, diced

  • 1 cup canned diced tomatoes, drained

  • 1 cup green chilies, chopped

  • 1 tsp chili powder

  • 1 tsp garlic powder

  • 1 tsp dried oregano

  • 1 tsp salt

  • 1/4 tsp black pepper

  • Optional toppings: shredded cheese, sour cream, avocado, cilantro

Directions

  1. Heat olive oil in a large skillet over medium heat.


  2. Add the diced onion and cook until it becomes translucent and slightly caramelized about 5 minutes.


  3. Add the ground sirloin or ground buffalo to the skillet and cook until browned, breaking it up into crumbles with a spatula or wooden spoon.


  4. Once the meat is browned, add the smoked paprika, ground cumin, chili powder, garlic powder, dried oregano, salt, and black pepper. Stir well to evenly coat the meat with the spices.


  5. Add the diced tomatoes and chopped green chilies to the skillet. Stir to combine all the ingredients.


  6. Reduce the heat to low, cover the skillet, and let the mixture simmer for about 15 minutes, allowing the flavors to meld together.


  7. After simmering, taste the mixture and adjust the seasonings if needed.
