Ingredients

  • 1 lb. ground turkey

  • 1/2 cup chopped sun-dried tomatoes

  • 1/2 cup crumbled feta cheese

  • 2 cloves garlic, minced

  • 1/4 cup chopped fresh parsley

  • 1/4 cup chopped fresh mint

  • 1 tsp. dried oregano

  • Salt and black pepper, to taste

  • 1 head of butter lettuce, leaves separated

  • Olive oil, for cooking

Directions

  1. Heat a large skillet over medium-high heat and add a drizzle of olive oil.

  2. Add the ground turkey and cook, stirring frequently, until browned and cooked through.

  3. Add the chopped sun-dried tomatoes, minced garlic, dried oregano, and salt and black pepper to taste. Cook for another 2-3 minutes, until fragrant.

  4. Remove from heat and stir in the chopped fresh parsley and mint.

  5. To assemble the lettuce wraps, spoon the turkey mixture onto each butter lettuce leaf.

  6. Top each lettuce wrap with crumbled feta cheese.

  7. Serve and enjoy!
