4 oz (113g) boneless, skinless chicken breast, cut into bite-sized pieces
1 tablespoon olive oil
1/4 cup diced onion
1 clove garlic, minced
1/4 cup diced bell pepper (any color)
1/4 cup diced zucchini
1/4 cup diced eggplant
1/2 cup chopped tomatoes
1/2 cup low-sodium chicken broth
1/2 teaspoon dried oregano
1/2 teaspoon dried basil
1/4 teaspoon paprika
Salt and pepper to taste
Fresh parsley, chopped (for garnish)
Directions
Heat olive oil in a medium-sized saucepan over medium heat.
Add the diced onion and minced garlic to the pan and sauté for 2-3 minutes until they become translucent.
Add the chicken pieces to the pan and cook until browned on all sides, about 5 minutes.
Add the diced bell pepper, zucchini, and eggplant to the pan and sauté for another 2 minutes.
Stir in the chopped tomatoes, chicken broth, dried oregano, dried basil, paprika, salt, and pepper. Bring the mixture to a boil.
Reduce the heat to low, cover the pan, and simmer for 20-25 minutes, or until the chicken is cooked through and the vegetables are tender.
