Ingredients
For the Meatballs:
1/2 pound lean ground beef or turkey
1/2 small onion, grated
1 clove garlic, minced
1 tablespoon fresh parsley, chopped
Salt and pepper to taste
For the Roasted Veggies:
1 bell pepper, cut into chunks
1 zucchini, cut into chunks
1 small eggplant, cut into chunks
1 tablespoon olive oil
Salt and pepper to taste
For Serving:
1/2 cup hummus
Directions
Preheat your oven to 400°F (200°C).
In a bowl, combine the ground meat, grated onion, minced garlic, chopped parsley, salt, and pepper. Mix until well combined, then shape the mixture into small meatballs.
Place the meatballs on one side of a baking sheet.
On the other side of the baking sheet, spread out the chopped vegetables. Drizzle the vegetables with olive oil and season with salt and pepper.
Place the baking sheet in the preheated oven and bake for about 20-25 minutes, or until the meatballs are cooked through and the vegetables are tender and slightly caramelized.
Serve the meatballs and roasted vegetables with a side of hummus for dipping.
