1 head cauliflower
2 cloves garlic, minced
2 tbsp butter or ghee
1/4 cup grated Parmesan cheese
1/4 cup heavy cream
1/4 tsp onion powder
Salt and pepper, to taste
Optional: fresh chopped herbs (such as parsley, thyme, or chives) for garnish
Directions
Rinse the cauliflower head under cold water and remove any green leaves. Cut the cauliflower into small florets.
In a large pot, bring water to a boil. Add a pinch of salt to the boiling water.
Add the cauliflower florets to the boiling water and cook for about 10 minutes or until the cauliflower is tender when pierced with a fork.
While the cauliflower is cooking, heat the butter or ghee in a small skillet over medium heat.
Add the minced garlic to the skillet and sauté for about 1-2 minutes until fragrant. Be careful not to burn the garlic.
Once the cauliflower is cooked, drain it well and return it to the pot.
Add the sautéed garlic, butter or ghee, grated Parmesan cheese, heavy cream, onion powder, salt, and pepper to the pot with the cauliflower.
Use a potato masher or an immersion blender to mash and blend the cauliflower until you reach your desired consistency. You can leave it slightly chunky or mash it until it becomes smooth and creamy.
Taste and adjust the seasoning if needed by adding more salt and pepper.
