Ingredients

  • 1/2 lb Mahi Mahi fish

  • 1 lemon, peel and cut in segments

  • 1 tbsp soy sauce or coconut aminos

  • 1 tbsp rice vinegar

  • 1/2 tsp grated ginger

  • 1 green onion, sliced

  • 1 clove garlic, minced

  • 1/4 tsp red pepper flakes

  • 2 cups baby spinach or arugula

  • 1 tbsp olive oil

  • Salt and pepper to taste

Directions

  1. Preheat the oven to 400°F (200°C).


  2. Pat dry the Mahi Mahi fish with a paper towel to remove any excess moisture. Season the fish with salt and pepper on both sides.


  3. In a small bowl, combine the soy sauce (or coconut aminos), rice vinegar, grated ginger, minced garlic, and red pepper flakes. Stir well to make a marinade.


  4. Place the fish in a shallow dish or ziplock bag and pour the marinade over it. Let it marinate for about 10 minutes to infuse the flavors.


  5. Heat the olive oil in an oven-safe skillet over medium heat. Once hot, add the marinated Mahi Mahi fish to the skillet and sear it for 2-3 minutes on each side until browned.


  6. Place the skillet with the fish in the preheated oven and bake for an additional 6-8 minutes, or until the fish is cooked through and flakes easily with a fork.


  7. While the fish is baking, heat a separate skillet over medium heat. Add a drizzle of olive oil and sauté the baby spinach or arugula until wilted, for about 2-3 minutes. Season with salt and pepper to taste.


  8. Once the fish is cooked, remove it from the oven and squeeze fresh lemon juice over it. Place the lemon segments on top of the fish.


  9. Serve the Mahi Mahi on a bed of sautéed greens, garnished with sliced green onions.
