For the chicken:
4 boneless, skinless chicken breasts
Salt and pepper to taste
1 tablespoon olive oil
For the BBQ Sauce:
1 cup tomato sauce
3 tablespoons apple cider vinegar
1 tablespoon Worcestershire sauce
1 tablespoon liquid smoke
2 tablespoons granulated erythritol or another sugar substitute
1 teaspoon smoked paprika
1 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon black pepper
1/2 teaspoon salt
Directions
Preheat your grill or grill pan to medium-high heat.
Season the chicken breasts on both sides with salt and pepper.
To prepare the BBQ sauce, combine all the sauce ingredients in a small saucepan over medium heat. Bring to a simmer and cook for about 10-15 minutes, or until the sauce has thickened.
Lightly oil the grill or grill pan. Add the chicken breasts and grill for about 7 minutes per side, or until the internal temperature reaches 165°F (74°C).
During the last few minutes of grilling, brush the BBQ sauce onto the chicken.
Serve the chicken hot, with additional BBQ sauce on the side if desired.
