Ingredients
400g beef sirloin or tenderloin, thinly sliced
1 tablespoon olive oil
1 medium onion, finely chopped
2 cloves garlic, minced
250g mushrooms, sliced
1 cup beef broth (low sodium)
1 tablespoon Worcestershire sauce
1 teaspoon Dijon mustard
1/2 cup sour cream (for a healthier option, use Greek yogurt)
Salt and pepper to taste
Fresh parsley, chopped, for garnish
Optional: 1 tablespoon cornstarch (omit for stricter low-carb)
Directions
Cook the Beef:
Season the beef slices with salt and pepper.
In a large skillet, heat the olive oil over medium-high heat.
Add the beef and cook until browned. Remove from the skillet and set aside.
Sauté the Vegetables:
In the same skillet, add the onions and garlic. Sauté until translucent.
Add the mushrooms and cook until they are soft and browned.
Create the Sauce:
Pour in the beef broth, Worcestershire sauce, and Dijon mustard. Stir well.
If using cornstarch, mix it with a little water and add to the skillet to thicken the sauce.
Bring the mixture to a simmer and let it cook for a few minutes.
Combine:
Return the cooked beef to the skillet.
Reduce the heat and stir in the sour cream or Greek yogurt. Warm through but do not boil.
Serve:
Garnish with chopped parsley.
Serve with a side of steamed vegetables or cauliflower rice for a complete low-carb meal.
