Ingredients

  • 400g beef sirloin or tenderloin, thinly sliced

  • 1 tablespoon olive oil

  • 1 medium onion, finely chopped

  • 2 cloves garlic, minced

  • 250g mushrooms, sliced

  • 1 cup beef broth (low sodium)

  • 1 tablespoon Worcestershire sauce

  • 1 teaspoon Dijon mustard

  • 1/2 cup sour cream (for a healthier option, use Greek yogurt)

  • Salt and pepper to taste

  • Fresh parsley, chopped, for garnish

  • Optional: 1 tablespoon cornstarch (omit for stricter low-carb)

Directions

  1. Cook the Beef:

    • Season the beef slices with salt and pepper.

    • In a large skillet, heat the olive oil over medium-high heat.

    • Add the beef and cook until browned. Remove from the skillet and set aside.

  2. Sauté the Vegetables:

    • In the same skillet, add the onions and garlic. Sauté until translucent.

    • Add the mushrooms and cook until they are soft and browned.

  3. Create the Sauce:

    • Pour in the beef broth, Worcestershire sauce, and Dijon mustard. Stir well.

    • If using cornstarch, mix it with a little water and add to the skillet to thicken the sauce.

    • Bring the mixture to a simmer and let it cook for a few minutes.

  4. Combine:

    • Return the cooked beef to the skillet.

    • Reduce the heat and stir in the sour cream or Greek yogurt. Warm through but do not boil.

  5. Serve:

    • Garnish with chopped parsley.

    • Serve with a side of steamed vegetables or cauliflower rice for a complete low-carb meal.
