For the Salad:
2 skinless chicken breasts
1 head of romaine lettuce, chopped
1/4 cup grated parmesan cheese
1/4 cup chopped almonds
1/4 cup cherry tomatoes, halved
For the Dressing:
1/4 cup Greek yogurt
1/4 cup olive oil
1/4 cup grated parmesan cheese
2 tablespoons lemon juice
2 cloves garlic, minced
Salt and pepper to taste
Directions
Preheat the oven to 375°F (190°C). Season the chicken breasts with salt and pepper and place them on a baking sheet lined with parchment paper. Bake for 25-30 minutes, or until cooked through.
While the chicken is cooking, prepare the salad ingredients. Chop the lettuce and halve the cherry tomatoes.
To make the dressing, whisk together the Greek yogurt, olive oil, parmesan cheese, lemon juice, garlic, salt, and pepper until well combined.
Once the chicken is done, let it cool for a few minutes, then chop it into bite-sized pieces.
In a large bowl, combine the chopped lettuce, cherry tomatoes, and chopped chicken. Toss with the dressing until everything is evenly coated.
