Ingredients

  • 1 small lobster tail (about 4 ounces)

  • 1 tablespoon butter

  • 1/4 cup diced onion

  • 1/4 cup diced celery

  • 1/4 cup diced carrots

  • 1 clove garlic, minced

  • 1 cup seafood or vegetable broth (preferably low-sodium)

  • 1/2 cup heavy cream

  • 1/2 teaspoon paprika

  • Salt and pepper to taste

  • Fresh parsley for garnish

  • 1 small cucumber, thinly sliced

Directions

  1. Fill a large pot with water and bring it to a boil. Add the lobster tail and cook for about 5 minutes until it turns opaque and the shell becomes red. Remove the lobster tail from the pot and let it cool. Once cooled, remove the meat from the shell and chop it into small pieces. Set aside.

  2. In a separate pot, melt the butter over medium heat. Add the diced onion, celery, carrots, and minced garlic. Sauté for about 5 minutes until the vegetables become tender.

  3. Add the chopped lobster meat to the pot and stir well.

  4. Pour in the seafood or vegetable broth and bring it to a simmer. Let it cook for about 10 minutes to allow the flavors to blend.

  5. Using an immersion blender or a regular blender, puree the soup until smooth. If using a regular blender, be careful as the soup will be hot.

  6. Return the soup to the pot and stir in the heavy cream. Add the paprika, salt, and pepper to taste. Simmer for an additional 5 minutes.

  7. While the bisque simmers, prepare the cucumber slices by washing and slicing the cucumber thinly.

  8. Serve the lobster bisque in a bowl, garnished with fresh parsley. Accompany it with a side of cucumber slices.
