Ingredients

  • 4-6 turkey deli slices (approximately 3-4 ounces)

  • 2-3 large lettuce leaves (such as romaine or iceberg)

  • 2-3 slices of mozzarella cheese

  • 1/4 cup sliced cucumber

  • 1/4 cup sliced bell peppers

  • 1 tablespoon mayonnaise (sugar-free or homemade)

  • 1 teaspoon Dijon mustard

  • Salt and pepper to taste

Directions

  1. Rinse the lettuce leaves and pat them dry with a paper towel. Set them aside.

  2. In a small bowl, mix together the mayonnaise and Dijon mustard. Season with salt and pepper to taste.

  3. Lay the turkey deli slices flat on a clean surface.

  4. Spread a thin layer of the mayo-mustard mixture onto each turkey slice.

  5. Place a slice of mozzarella cheese on top of each turkey slice, near one end.

  6. Add cucumber and bell pepper slices on top of the cheese.

  7. Roll up the turkey slices tightly, starting from the end with the cheese and vegetables.

  8. Take one lettuce leaf and place a rolled-up turkey slice on it. Wrap the lettuce leaf around the turkey roll, tucking in the sides as you go. Repeat with the remaining turkey slices and lettuce leaves.

  9. Slice the lettuce-wrapped turkey rolls in half, if desired, and serve.
