Ingredients

  • 2-3 fresh lemons (1/2 cup fresh juice)

  • 2 garlic cloves, minced

  • 1 tbsp Italian seasoning

  • Pinch of sea salt

  • 1-2 tbsp honey or a low-carb sweetener like monk fruit sweetener or erythritol

  • 1-1/2 cups extra-virgin olive oil

  • 2 tbsp apple cider vinegar or red wine vinegar

  • 1 tbsp Dijon mustard

Directions

  1. Squeeze the fresh lemons to obtain 1/2 cup of fresh juice. Set aside.

  2. In a small bowl, combine the minced garlic, Italian seasoning, sea salt, honey (or low-carb sweetener), extra-virgin olive oil, apple cider vinegar (or red wine vinegar), and Dijon mustard.

  3. Whisk the ingredients together until they are well combined and emulsified.

  4. Slowly pour in the fresh lemon juice while whisking continuously. This will help to incorporate the lemon flavor into the vinaigrette.

  5. Continue whisking until the vinaigrette is smooth and well blended.

  6. Taste the vinaigrette and adjust the seasoning if needed. You can add more salt, honey (or sweetener), or lemon juice according to your preference.

  7. Once the vinaigrette is seasoned to your liking, transfer it to a jar or airtight container.

  8. Store the Lemon Vinaigrette in the refrigerator for at least 30 minutes before serving to allow the flavors to meld together.

  9. Shake the jar or container before using to ensure the ingredients are well mixed.

  10. Drizzle the Lemon Vinaigrette over your favorite salad or use it as a marinade for grilled vegetables or meats.

  11. Enjoy your homemade Lemon Vinaigrette!
