Ingredients

For the chicken:


  • 4 boneless, skinless chicken breasts

  • 2 tablespoons olive oil

  • 2 cloves garlic, minced

  • 1 teaspoon dried thyme

  • 4 medium zucchini, spiralized

Directions

  1. Preheat your oven to 425°F (220°C).

  2. In a small bowl, combine the olive oil, minced garlic, dried thyme, dried rosemary, lemon zest, salt, and pepper. Mix well.

  3. Place the chicken breasts on a baking sheet lined with parchment paper. Brush the chicken with the herb mixture, making sure to coat both sides.

  4. Roast the chicken in the preheated oven for about 20-25 minutes or until the internal temperature reaches 165°F (74°C). Cooking time may vary depending on the thickness of the chicken breasts.
