Ingredients

  • 4 oz chicken breast

  • Salt and black pepper, to taste

  • 1 clove garlic, minced

  • Juice of 2 lemons

  • 1 tsp fresh ginger root, grated

  • 1 tsp honey (optional)

  • 1 tbsp olive oil

  • Fresh parsley, chopped for garnish

Directions

  1. Season the chicken with salt and black pepper on both sides.

  2. Preheat a non-stick skillet over medium heat with 1 tablespoon of olive oil.

  3. Add the chicken to the skillet and cook for 4-5 minutes on each side, or until it is cooked through and golden brown.

  4. Add the minced garlic to the skillet and cook for another minute until fragrant.

  5. Pour the juice of two lemons over the chicken, add the grated ginger, and honey (if using). Stir well.

  6. Reduce heat to low and cover the skillet with a lid. Simmer for about 10-15 minutes, or until the chicken is tender and the sauce has thickened.

  7. Garnish with fresh parsley and serve.
