For a thicker consistency, add xanthan gum to the shake.
Customize the sweetness and lemon flavor according to your taste preferences by adjusting the amount of stevia and lemon zest.
1 tsp lemon zest
8 oz unsweetened almond milk or coconut milk
1 scoop vanilla protein powder (low-carb and sugar-free)
1/2 tsp vanilla extract
1/2 tsp almond extract
2-3 drops liquid stevia or 1-2 packets of powdered stevia
1/4 tsp xanthan gum (optional, for a thicker consistency)
1-2 ice cubes (optional)
In a blender, add the lemon zest, unsweetened almond milk or coconut milk, vanilla protein powder, vanilla extract, almond extract, and stevia.
If you want a thicker consistency, add the xanthan gum to the blender as well.
Blend the ingredients on high speed until they are well combined and smooth.
If desired, add 1-2 ice cubes to the blender and continue blending until the shake becomes chilled and frothy.
Once the shake reaches your desired consistency, pour it into a glass or shaker bottle.
