  • 1 tsp lemon zest

  • 8 oz unsweetened almond milk or coconut milk

  • 1 scoop vanilla protein powder (low-carb and sugar-free)

  • 1/2 tsp vanilla extract

  • 1/2 tsp almond extract

  • 2-3 drops liquid stevia or 1-2 packets of powdered stevia

  • 1/4 tsp xanthan gum (optional, for a thicker consistency)

  • 1-2 ice cubes (optional)


  1. In a blender, add the lemon zest, unsweetened almond milk or coconut milk, vanilla protein powder, vanilla extract, almond extract, and stevia.

  2. If you want a thicker consistency, add the xanthan gum to the blender as well.
