Ingredients

  • 2 boneless, skinless chicken breasts (around 8 ounces each)

  • 2 tablespoons olive oil

  • 2 tablespoons fresh lemon juice

  • Zest of one lemon

  • 2 cloves garlic, minced

  • 1 teaspoon dried oregano

  • 1 teaspoon dried thyme

  • 1/2 teaspoon salt

  • 1/4 teaspoon black pepper

  • Fresh parsley, chopped, for garnish

Directions

  1. In a mixing bowl, combine the olive oil, fresh lemon juice, lemon zest, minced garlic, dried oregano, dried thyme, salt, and black pepper. Mix the marinade well.

  2. Place the chicken breasts in a resealable plastic bag or shallow dish, and pour the marinade over them. Ensure the chicken is evenly coated with the marinade. Seal the bag or cover the dish and let it marinate in the refrigerator for at least 30 minutes, or preferably overnight for better flavor.

  3. Preheat your grill to medium-high heat. Make sure the grill grates are clean and lightly oiled to prevent sticking.

  4. Take the chicken out of the marinade and let any excess marinade drip off. Discard the leftover marinade.

  5. Grill the chicken breasts for about 5-6 minutes on each side, or until the internal temperature reaches 165°F (74°C) and the chicken is cooked through.

  6. Once the chicken is done, remove it from the grill and let it rest for a couple of minutes to allow the juices to redistribute.

  7. Sprinkle the chopped fresh parsley on top for a burst of color and added flavor.
