1 boneless, skinless chicken breast half
½ cup sweet onion, sliced
1 yellow pepper, sliced
1 orange pepper, sliced
1 clove garlic, minced
½ tsp allspice
½ tsp cinnamon
¼ tsp nutmeg
sea salt and pepper, to taste
olive oil cooking spray
Directions
Preheat your oven to 375°F (190°C).
In a small bowl, combine the allspice, cinnamon, nutmeg, sea salt, and pepper.
Season the chicken breast half on both sides with the spice mixture. Make sure to evenly coat the chicken.
Heat a non-stick skillet over medium-high heat and lightly coat it with olive oil cooking spray.
Add the seasoned chicken breast to the skillet and cook for about 3-4 minutes on each side, or until browned.
Remove the chicken from the skillet and set it aside.
In the same skillet, add the sliced sweet onion, yellow pepper, orange pepper, and minced garlic. Sauté the vegetables for about 4-5 minutes, or until they are tender and slightly caramelized.
While the vegetables are cooking, prepare a baking dish by lightly coating it with olive oil cooking spray.
Transfer the cooked vegetables to the prepared baking dish and spread them out evenly.
