Ingredients
¼ cup red onion, minced
1 tbsp stevia, or to taste
1 tbsp jalapeno pepper, seeded and shredded finely
2 tsp apple cider vinegar
2 tsp Braggs Liquid Aminos
½ tsp sea salt, or to taste
½ tsp ground allspice
½ tsp thyme (dried)
½ black pepper, or to taste
¼ tsp red pepper flakes
4 boneless, skinless chicken breast
olive oil spray
Directions
In a bowl, combine the minced red onion, stevia, shredded jalapeno pepper, apple cider vinegar, Bragg's Liquid Aminos, sea salt, ground allspice, dried thyme, black pepper, and red pepper flakes. Mix well to create the marinade.
Place the chicken breasts in a shallow dish or a resealable plastic bag. Pour the marinade over the chicken, ensuring each breast is coated evenly. Let it marinate for at least 30 minutes or up to overnight in the refrigerator for the flavors to develop.
Preheat the grill or a stovetop grill pan over medium-high heat. If using a grill pan, lightly grease it with olive oil spray.
Remove the chicken breasts from the marinade, allowing any excess marinade to drip off. Discard the remaining marinade.
Place the chicken breasts on the preheated grill or grill pan. Cook for about 6-8 minutes per side or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C). The cooking time may vary depending on the thickness of the chicken breasts.
Once cooked, transfer the chicken breasts to a plate and let them rest for a few minutes before serving.
Serve the Jamaican-spiced chicken breast with your choice of side dishes, such as rice, roasted vegetables, or a fresh salad.
