1 spaghetti squash
2 lbs ground buffalo or extra lean ground beef
1 large onion, chopped
5 cloves garlic, chopped
1 large green bell pepper, chopped
4 large tomatoes, chopped
2 tbs Italian seasoning
Directions
Preheat the oven to 375°F (190°C).
Cut the spaghetti squash in half lengthwise and remove the seeds using a spoon. Place the halves cut side down on a baking sheet. Bake in the preheated oven for about 40-50 minutes or until the squash is tender and the strands can be easily scraped out with a fork. Remove from the oven and set aside to cool slightly.
In a large skillet or frying pan, cook the ground buffalo or extra lean ground beef over medium heat until browned and cooked through. Remove any excess fat from the pan.
Add the chopped onion, garlic, and green bell pepper to the skillet with the cooked ground meat. Cook for about 5 minutes or until the vegetables are softened.
Add the chopped tomatoes and Italian seasoning to the skillet. Stir well to combine all the ingredients. Simmer for another 5 minutes, allowing the flavors to meld together. Season with salt and pepper to taste.
While the meat and vegetable mixture is simmering, use a fork to scrape out the spaghetti squash strands into a large bowl. The strands should resemble spaghetti noodles.
Add the spaghetti squash strands to the skillet with the meat and vegetable mixture. Stir everything together until well combined.
Transfer the mixture to a casserole dish and spread it out evenly.
Place the casserole dish in the preheated oven and bake for about 25-30 minutes or until the casserole is heated through and the top is lightly browned.
Remove from the oven and let it cool for a few minutes before serving.
