1 tsp unsweetened cocoa powder
1/2 tsp vanilla extract
1/4 tsp peppermint extract
1-2 drops liquid stevia (or another low-carb sweetener, to taste)
1 cup unsweetened almond milk
1/4 cup heavy cream or coconut cream
Directions
In a small saucepan, combine the unsweetened cocoa powder, vanilla extract, peppermint extract, and liquid stevia. Whisk them together until well combined.
Gradually add the unsweetened almond milk to the saucepan while whisking continuously. Whisk until all the ingredients are thoroughly combined.
Place the saucepan over medium heat and heat the mixture until it is hot but not boiling, stirring occasionally. This should take about 5 minutes.
While the cocoa mixture is heating, in a separate bowl, whisk the heavy cream or coconut cream until it becomes frothy.
Once the cocoa mixture is hot, remove the saucepan from the heat. Pour the hot peppermint cocoa into a mug.
Spoon the frothy cream on top of the hot cocoa, creating a layer of cream.
Optional: Garnish with a sprinkle of cocoa powder or crushed candy cane for added flavor and decoration.
