Ingredients

  • 3.5 oz chicken breast, cooked and shredded

  • 1 cup organic, no-salt chicken broth or homemade broth

  • 1 cup water

  • 4 tbsp rice vinegar

  • 4 tbsp coconut aminos

  • 1-inch piece of ginger, sliced

  • 2 tbsp shallot, minced

  • 2 tbsp chopped scallions

Directions

  1. In a medium-sized pot, combine the chicken broth, water, rice vinegar, coconut aminos, ginger slices, minced garlic, and minced shallot. Place the pot over medium heat.


  2. Bring the mixture to a gentle simmer and let it cook for about 5 minutes to allow the flavors to meld together.


  3. Add the cooked and shredded chicken breast to the pot and stir to combine. Allow it to simmer for an additional 2-3 minutes to heat the chicken through.


  4. Season the soup with ground black pepper, red pepper flakes, and sea salt. Adjust the seasoning according to your taste preferences.


  5. Remove the pot from the heat and garnish the soup with chopped cilantro and scallions.
