3.5 oz chicken breast, cooked and shredded
1 cup organic, no-salt chicken broth or homemade broth
1 cup water
4 tbsp rice vinegar
4 tbsp coconut aminos
1-inch piece of ginger, sliced
1 clove garlic, minced
2 tbsp shallot, minced
1/2 tsp ground black pepper
1/2 tsp red pepper flakes
1/2 tsp sea salt
2 tbsp chopped cilantro
2 tbsp chopped scallions
Directions
In a medium-sized pot, combine the chicken broth, water, rice vinegar, coconut aminos, ginger slices, minced garlic, and minced shallot. Place the pot over medium heat.
Bring the mixture to a gentle simmer and let it cook for about 5 minutes to allow the flavors to meld together.
Add the cooked and shredded chicken breast to the pot and stir to combine. Allow it to simmer for an additional 2-3 minutes to heat the chicken through.
