Ingredients

  • 2 tilapia fillets (6 oz each)

  • 1/4 cup almond flour

  • 1 tsp dried dill

  • 1 tsp dried rosemary

  • 1 tsp garlic powder

  • 1/4 tsp sea salt

  • 1/4 tsp black pepper

  • 2 tbsp butter

  • Juice of 1 lemon

  • 1 tbsp chopped fresh parsley

Directions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.


  2. In a shallow dish or plate, combine almond flour, dried dill, dried rosemary, garlic powder, sea salt, and black pepper. Mix well to combine all the herbs and seasonings.


  3. Pat dry the tilapia fillets with paper towels to remove any excess moisture. This will help the coating to stick better.


  4. Dip each tilapia fillet into the herb mixture, pressing gently to ensure the coating sticks to all sides. Shake off any excess flour mixture.


  5. In a large skillet, melt the butter over medium-high heat. Once the butter has melted and is bubbling, add the coated tilapia fillets to the skillet.


  6. Cook the tilapia fillets for about 2-3 minutes on each side or until they turn golden brown. This will give them a nice crust.


  7. Carefully transfer the partially cooked tilapia fillets onto the prepared baking sheet.


  8. Place the baking sheet in the preheated oven and bake the tilapia for an additional 5-7 minutes, or until the fish is cooked through and flakes easily with a fork.


  9. While the tilapia is baking, squeeze the juice of one lemon over the fillets.


  10. Once the tilapia is fully cooked, remove it from the oven.


  11. Sprinkle the fresh parsley evenly over the cooked tilapia fillets.


  12. Serve the Herbed Tilapia immediately, garnished with lemon wedges if desired. It pairs well with steamed vegetables or a side salad.
