Ingredients

  • 1 medium cauliflower, finely chopped

  • 1 cup celery, diced

  • 1 cup mushrooms, chopped

  • 1/2 cup onion, finely diced

  • 2 cloves garlic, minced

  • 1/4 cup fresh parsley, chopped

  • 1/4 cup almond flour

  • 1/4 cup grated Parmesan cheese

  • 1/4 cup unsweetened almond milk

  • 2 tablespoons olive oil

  • 1 teaspoon poultry seasoning

  • Salt and pepper to taste

  • 1 cup cooked chicken breast, shredded

Directions

  1. Preheat oven to 350°F (175°C).

  2. In a large skillet, sauté onions, garlic, celery, and mushrooms in olive oil until softened.

  3. Add chopped cauliflower and cook until tender-crisp.

  4. In a bowl, mix almond flour, Parmesan cheese, poultry seasoning, salt, and pepper.

  5. Combine the dry mixture with the cooked vegetables.

  6. Add almond milk and mix until well combined.

  7. Fold in shredded chicken and fresh parsley.

  8. Transfer the mixture to a baking dish and bake for 20-25 minutes, or until golden brown on top.

  9. Allow it to cool slightly before serving.
