4 whole grain tortillas
1 cup hummus
2 cups mixed vegetables (such as bell peppers, zucchini, eggplant, and onions), sliced
1 tablespoon olive oil
Salt and pepper to taste
Optional toppings: avocado slices, lettuce, sprouts
Directions
Preheat your grill or grill pan over medium heat.
Toss the mixed vegetables with olive oil, salt, and pepper in a bowl until evenly coated.
Grill the vegetables for about 5-7 minutes, or until they are tender and have grill marks, flipping halfway through.
Warm the whole grain tortillas slightly on the grill or in a separate pan.
Spread 1/4 cup of hummus onto each tortilla.
Divide the grilled vegetables evenly among the tortillas, placing them on top of the hummus.
