  • 4 whole grain tortillas

  • 1 cup hummus

  • 2 cups mixed vegetables (such as bell peppers, zucchini, eggplant, and onions), sliced

  • 1 tablespoon olive oil

  • Salt and pepper to taste

  • Optional toppings: avocado slices, lettuce, sprouts

Directions

  • Preheat your grill or grill pan over medium heat.

  • Toss the mixed vegetables with olive oil, salt, and pepper in a bowl until evenly coated.

  • Grill the vegetables for about 5-7 minutes, or until they are tender and have grill marks, flipping halfway through.

  • Warm the whole grain tortillas slightly on the grill or in a separate pan.

  • Spread 1/4 cup of hummus onto each tortilla.

  • Divide the grilled vegetables evenly among the tortillas, placing them on top of the hummus.
