4 tilapia fillets
1 cup wild rice, uncooked
2 cups green beans, trimmed
2 tablespoons olive oil
2 cloves garlic, minced
1 teaspoon lemon zest
2 tablespoons lemon juice
1 teaspoon dried oregano
Salt and pepper to taste
Fresh parsley for garnish
Directions
Prepare the Wild Rice:
Cook the wild rice according to package instructions. Set aside.
Marinate the Tilapia:
In a bowl, mix olive oil, minced garlic, lemon zest, lemon juice, dried oregano, salt, and pepper.
Coat the tilapia fillets with the marinade and let them sit for 15-20 minutes.
Grill the Tilapia:
Preheat the grill to medium-high heat.
Grill the tilapia fillets for 3-4 minutes per side or until they are cooked through and have a nice char.
Steam the Green Beans:
While the tilapia is grilling, steam the green beans until they are tender-crisp, about 4-5 minutes.
Assemble the Dish:
Serve the grilled tilapia on a bed of cooked wild rice, alongside the steamed green beans.
Garnish with fresh parsley and additional lemon wedges if desired.
