Ingredients

  • 4 tilapia fillets

  • 1 cup wild rice, uncooked

  • 2 cups green beans, trimmed

  • 2 tablespoons olive oil

  • 2 cloves garlic, minced

  • 1 teaspoon lemon zest

  • 2 tablespoons lemon juice

  • 1 teaspoon dried oregano

  • Salt and pepper to taste

  • Fresh parsley for garnish

Directions

  1. Prepare the Wild Rice:

    • Cook the wild rice according to package instructions. Set aside.

  2. Marinate the Tilapia:

    • In a bowl, mix olive oil, minced garlic, lemon zest, lemon juice, dried oregano, salt, and pepper.

    • Coat the tilapia fillets with the marinade and let them sit for 15-20 minutes.

  3. Grill the Tilapia:

    • Preheat the grill to medium-high heat.

    • Grill the tilapia fillets for 3-4 minutes per side or until they are cooked through and have a nice char.

  4. Steam the Green Beans:

    • While the tilapia is grilling, steam the green beans until they are tender-crisp, about 4-5 minutes.

  5. Assemble the Dish:

    • Serve the grilled tilapia on a bed of cooked wild rice, alongside the steamed green beans.

    • Garnish with fresh parsley and additional lemon wedges if desired.
