For the Grilled Snapper:
1 snapper fillet (approximately 4-6 ounces)
1 tablespoon olive oil
1 clove garlic, minced
1 teaspoon lemon zest
1 teaspoon fresh lemon juice
Salt and pepper to taste
For the Mojo Sauce:
1/2 cup fresh cilantro leaves
1/4 cup fresh mint leaves
1 clove garlic
1 tablespoon olive oil
1 tablespoon fresh lime juice
Salt and pepper to taste
For the Sautéed Green Beans:
1 cup fresh green beans, ends trimmed
1 teaspoon olive oil
1 clove garlic, minced
Salt and pepper to taste
Directions
Preheat your grill to medium-high heat.
In a small bowl, combine olive oil, minced garlic, lemon zest, lemon juice, salt, and pepper. Mix well.
Place the snapper fillet on a plate and brush both sides with the olive oil mixture. Set aside to marinate for 10-15 minutes.
Meanwhile, prepare the Mojo sauce. In a food processor or blender, combine cilantro, mint, garlic, olive oil, lime juice, salt, and pepper. Blend until smooth. Set aside.
In a skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1 minute until fragrant. Add green beans and sauté for about 5 minutes until they are tender-crisp. Season with salt and pepper to taste. Remove from heat and set aside.
Grill the snapper fillet for about 3-4 minutes per side, or until it flakes easily with a fork. Remove from the grill and let it rest for a minute.
Serve the grilled snapper with a generous drizzle of Mojo sauce on top. Plate the sautéed green beans on the side.
