Grilled shrimp with asparagus and a side of farro.

1 pound large shrimp, peeled and deveined
1 bunch asparagus, tough ends trimmed
1 cup farro, uncooked
2 tablespoons olive oil
2 cloves garlic, minced
1 teaspoon smoked paprika
Salt and pepper to taste
Fresh lemon wedges for serving
Cook farro according to package instructions. Set aside.
In a bowl, toss shrimp and asparagus with olive oil, minced garlic, smoked paprika, salt, and pepper.
Preheat the grill to medium-high heat.
Skewer shrimp and asparagus alternately onto skewers.
Grill skewers for 3-4 minutes per side or until shrimp are opaque and asparagus is tender.
Serve grilled shrimp and asparagus over a bed of cooked farro.
Garnish with fresh lemon wedges.
