Ingredients

  • 1 pound large shrimp, peeled and deveined

  • 1 bunch asparagus, tough ends trimmed

  • 1 cup farro, uncooked

  • 2 tablespoons olive oil

  • 2 cloves garlic, minced

  • 1 teaspoon smoked paprika

  • Salt and pepper to taste

  • Fresh lemon wedges for serving

Directions

  1. Cook farro according to package instructions. Set aside.

  2. In a bowl, toss shrimp and asparagus with olive oil, minced garlic, smoked paprika, salt, and pepper.

  3. Preheat the grill to medium-high heat.

  4. Skewer shrimp and asparagus alternately onto skewers.

  5. Grill skewers for 3-4 minutes per side or until shrimp are opaque and asparagus is tender.

  6. Serve grilled shrimp and asparagus over a bed of cooked farro.

  7. Garnish with fresh lemon wedges.
