Ingredients

  • 12 large shrimp, peeled and deveined

  • 2 medium zucchinis, spiralized

  • 2 tbsp olive oil, divided

  • 2 cloves garlic, minced

  • 1/4 cup fresh lemon juice

  • Salt and pepper, to taste

  • 1/4 cup chopped fresh parsley

  • 1/4 tsp red pepper flakes (optional)

Directions

  1. Preheat the grill to medium-high heat.

  2. In a small bowl, whisk together 1 tbsp olive oil, minced garlic, lemon juice, salt, and pepper.

  3. Thread the shrimp onto skewers and brush with the lemon-garlic mixture.

  4. Grill the shrimp for 2-3 minutes per side, or until they are pink and cooked through. Remove from the grill and set aside.

  5. In a large skillet, heat the remaining 1 tbsp olive oil over medium heat. Add the spiralized zucchini and sauté for 3-4 minutes until they begin to soften but still retain some crunch.

  6. Remove the skillet from heat and toss the zoodles with the remaining lemon-garlic mixture, chopped parsley, and red pepper flakes if using.

  7. To serve, divide the zoodles between two plates and top with grilled shrimp. Enjoy immediately.
