Ingredients

For the Grilled Salmon:

2 salmon fillets

1 tablespoon olive oil

Salt and pepper to taste

1 lemon, sliced


For the Spaghetti Squash:

1 medium spaghetti squash

1 tablespoon olive oil

Salt and pepper to taste

2 cloves garlic, minced

1 tablespoon fresh herbs (like basil, parsley, or oregano)

Directions

  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.

  2. Cut the spaghetti squash in half lengthwise and scoop out the seeds. Drizzle with olive oil, season with salt, pepper and minced garlic. Place the squash cut side down on the baking sheet and roast for about 40 minutes or until the flesh is tender.

  3. While the squash is roasting, prepare your salmon. Preheat your grill or a grill pan over medium-high heat. Brush the salmon fillets with olive oil, season with salt and pepper. Place the salmon on the grill skin-side down, and grill for about 4-5 minutes on each side or until cooked to your desired doneness.

  4. Once the spaghetti squash is roasted, use a fork to scrape out the flesh into spaghetti-like strands. Toss with a little more olive oil, fresh herbs, and adjust seasoning if needed.

  5. Serve the grilled salmon over a bed of spaghetti squash. You can garnish the salmon with fresh lemon slices if desired.
