Ingredients

  • 1 lb pork tenderloin (extra-lean, trimmed of visible fat)

  • 1 tbsp extra virgin olive oil

  • 2 cloves garlic, minced (organic recommended)

  • 1 tsp Dijon mustard (no sugar added)

  • 1 tsp smoked paprika

  • ½ tsp dried thyme

  • ½ tsp dried oregano

  • ½ tsp sea salt

  • ¼ tsp black pepper

  • Juice of ½ lemon (freshly squeezed)

Directions

  1. Prepare the Marinade: In a small bowl, whisk together olive oil, garlic, Dijon mustard, smoked paprika, thyme, oregano, salt, pepper, and lemon juice.

  2. Marinate the Pork: Rub the mixture evenly over the pork tenderloin and let it marinate for at least 30 minutes (or overnight for deeper flavor).

  3. Preheat the Grill: Set your grill to medium-high heat (about 400°F).

  4. Grill the Pork: Place the tenderloin on the grill and cook for 15-18 minutes, turning every 4-5 minutes until the internal temperature reaches 145°F (63°C).

  5. Rest & Serve: Remove from the grill, cover loosely with foil, and let rest for 5 minutes before slicing.
