Ingredients

2 ripe peaches, halved and pitted

4 cups fresh arugula

1/2 cup feta cheese, crumbled

2 tablespoons olive oil, divided

1 tablespoon balsamic vinegar

Salt and pepper to taste

Directions

  1. Preheat your grill to medium heat.

  2. Brush the peach halves with 1 tablespoon of olive oil.

  3. Place the peaches on the grill, cut side down. Grill for about 5 minutes, until the peaches are soft and have grill marks.

  4. Remove the peaches from the grill and let them cool slightly. Once cool, slice them into wedges.

  5. In a large bowl, combine the arugula, grilled peach slices, and crumbled feta cheese.
