Grilled Peach and Arugula Salad
Relish the delightful fusion of flavors in our Grilled Peach Arugula Salad. This recipe pairs the sweetness of grilled peaches with the peppery bite of arugula and the salty tang of feta cheese.
This Grilled Peach Arugula Salad can be served as a light lunch, side dish, or even an appetizer. For added protein, top it with grilled chicken or tofu. Adding some crunchy toasted almonds or walnuts can also add an interesting texture.
2 ripe peaches, halved and pitted
4 cups fresh arugula
1/2 cup feta cheese, crumbled
2 tablespoons olive oil, divided
1 tablespoon balsamic vinegar
Salt and pepper to taste
Preheat your grill to medium heat.
Brush the peach halves with 1 tablespoon of olive oil.
Place the peaches on the grill, cut side down. Grill for about 5 minutes, until the peaches are soft and have grill marks.
Remove the peaches from the grill and let them cool slightly. Once cool, slice them into wedges.
In a large bowl, combine the arugula, grilled peach slices, and crumbled feta cheese.
In a small bowl, whisk together the remaining 1 tablespoon of olive oil, balsamic vinegar, salt, and pepper to make the dressing.
Drizzle the dressing over the salad and toss gently to combine.
