Ingredients

  • 1 lb. jumbo shrimp, peeled and deveined

  • 2 tbsp olive oil

  • 1 tbsp chili powder

  • 1 tsp garlic powder

  • 1 tsp onion powder

  • 1/2 tsp paprika

  • 1/4 tsp cumin

  • Salt and pepper, to taste

  • 4 low-carb tortillas

  • 1 ripe avocado, sliced

  • Fresh cilantro, chopped

  • Lime wedges, for serving

Directions

  1. Preheat your grill or grill pan over medium heat.


  2. In a bowl, combine olive oil, chili powder, garlic powder, onion powder, paprika, cumin, salt, and pepper. Stir well to create a marinade.


  3. Add the jumbo shrimp to the marinade and toss to coat them evenly. Let them marinate for about 10-15 minutes.


  4. While the shrimp is marinating, heat the low-carb tortillas on the grill or in a dry skillet until warm and pliable. Keep them warm by wrapping them in aluminum foil.


  5. Once the shrimp has marinated, thread them onto skewers or place them directly on the grill. Cook for 2-3 minutes per side, or until they turn pink and opaque.


  6. Remove the shrimp from the grill and set aside.


  7. To assemble the tacos, place a few slices of avocado on each warm tortilla. Add a few grilled shrimp on top of the avocado slices.
