Ingredients

Ingredients:

  • 1 cup Romaine lettuce, chopped

  • 1 cup Iceberg lettuce, chopped

  • ½ cup green bell pepper, thinly sliced

  • ½ cup fresh tomatoes, wedged

  • ¼ of a whole cucumber, sliced

  • 2 grilled or baked chicken tenders

  • ½ cup zucchini, chopped

  • ½ cup squash, chopped

  • Rouse’s Cajun seasoning, to taste



For the Dressing:

  • 2 tablespoons extra virgin olive oil

  • 1 tablespoon apple cider vinegar

  • Salt and pepper, to taste

Directions

  1. In a large salad bowl, combine the Romaine and Iceberg lettuce. Toss together until well mixed.

  2. Add the sliced bell pepper, tomato wedges, cucumber slices, chopped zucchini, and chopped squash to the bowl. Toss again to combine.

  3. Season your chicken tenders with Rouse’s Cajun seasoning, and grill or bake until fully cooked. Once cooked, allow them to cool slightly and then slice into thin strips.

  4. Add the sliced chicken tenders to the salad.

  5. In a small bowl, whisk together the olive oil, apple cider vinegar, salt, and pepper to create the dressing. Drizzle this over the salad and toss gently until all ingredients are lightly coated.

  6. Serve your fresh summer salad immediately, or refrigerate for up to 2 hours before serving to let the flavors meld together.
