Ingredients

2 chicken breasts (about 6 oz each)

1 tbsp olive oil

Salt and pepper to taste

1/2 tbsp lemon juice

1 clove garlic, minced

4 cups mixed salad greens

1 cup cherry tomatoes, halved

1 small cucumber, sliced

2 tbsp low-carb salad dressing of your choice

Directions

Preheat your grill or grill pan over medium-high heat.

Rub the chicken breasts with olive oil, salt, pepper, lemon juice, and minced garlic. Ensure that the chicken is well coated.

Grill the chicken breasts for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (74°C).

While the chicken is grilling, prepare the salad. In a large bowl, combine the mixed greens, halved cherry tomatoes, and sliced cucumber.

Once the chicken is done, let it rest for a few minutes. Then slice it into thin strips.

Divide the salad evenly between two plates, top with the grilled chicken strips, and drizzle with your chosen low-carb dressing.
