4 ounces grilled chicken breast, sliced
2 cups fresh romaine lettuce, torn into bite-sized pieces
1/4 cup grated Parmesan cheese
2 tablespoons Caesar dressing (low-carb or homemade, see below)
1 tablespoon extra-virgin olive oil
1/2 tablespoon lemon juice
Salt and pepper to taste
Directions
Prepare the Caesar dressing (low-carb):
In a small bowl, whisk together 2 tablespoons of mayonnaise, 1 tablespoon of Dijon mustard, 1 tablespoon of lemon juice, 1 clove of minced garlic, 1/2 teaspoon of Worcestershire sauce, 1/4 teaspoon of anchovy paste (optional), and salt and pepper to taste. Adjust the flavors according to your preference, adding more lemon juice for acidity or more mayonnaise for creaminess. Set the dressing aside.
In a large mixing bowl, combine the torn romaine lettuce and sliced grilled chicken breast.
In a separate small bowl, whisk together the extra-virgin olive oil and lemon juice. Season with salt and pepper to taste.
Drizzle the olive oil and lemon juice mixture over the lettuce and chicken. Toss gently to coat the salad evenly.
