3 large eggs
1 tablespoon of olive oil
1/4 cup of crumbled feta cheese
1/4 cup of chopped spinach
1/4 cup of chopped red onion
Salt and pepper to taste
Crack the eggs into a bowl and beat them until the yolks and whites are fully mixed.
Add the spinach, red onion, salt, and pepper to the eggs and mix well.
Heat the olive oil in a non-stick pan over medium heat.
