Ingredients

  • 1 lb. ground chicken

  • 2 tbsp. olive oil

  • 2 cloves garlic, minced

  • 1/2 onion, chopped

  • 1/2 red bell pepper, chopped

  • 2 tsp. dried oregano

  • 1/2 tsp. dried thyme

  • Salt and pepper, to taste

  • 1/4 cup crumbled feta cheese

  • 1/4 cup chopped fresh parsley

  • 1/4 cup chopped fresh mint

  • 1 head lettuce, leaves separated

  • Lemon wedges, for serving

Directions

  1. Heat the olive oil in a large skillet over medium heat. Add the garlic, onion, and red bell pepper and cook until the vegetables are soft about 5 minutes.

  2. Add the ground chicken, oregano, thyme, salt, and pepper to the skillet. Cook, breaking up the chicken with a spatula, until the chicken is browned and cooked through about 10-12 minutes.

  3. Remove the skillet from the heat and stir in the feta cheese, parsley, and mint.

  4. Arrange the lettuce leaves on a platter. Spoon the chicken mixture into the lettuce leaves.

  5. Serve the Greek chicken lettuce wraps with lemon wedges on the side.
