Ingredients
1 lb. ground chicken
2 tbsp. olive oil
2 cloves garlic, minced
1/2 onion, chopped
1/2 red bell pepper, chopped
2 tsp. dried oregano
1/2 tsp. dried thyme
Salt and pepper, to taste
1/4 cup crumbled feta cheese
1/4 cup chopped fresh parsley
1/4 cup chopped fresh mint
1 head lettuce, leaves separated
Lemon wedges, for serving
Directions
Heat the olive oil in a large skillet over medium heat. Add the garlic, onion, and red bell pepper and cook until the vegetables are soft about 5 minutes.
Add the ground chicken, oregano, thyme, salt, and pepper to the skillet. Cook, breaking up the chicken with a spatula, until the chicken is browned and cooked through about 10-12 minutes.
Remove the skillet from the heat and stir in the feta cheese, parsley, and mint.
Arrange the lettuce leaves on a platter. Spoon the chicken mixture into the lettuce leaves.
Serve the Greek chicken lettuce wraps with lemon wedges on the side.
